Highlands DADY (Dry Activated Distillers Yeast) is used in the production of Malt Whiskey by fermentation of wort made from malted barley/distilling malt.
Highlands DADY contains a selected strain of Saccharomyces cerevisiae distillers’ yeast in a highly concentrated and stable form.
Instructions for Use:
In order to restore the dried yeast to its fully active state, it is necessary to rehydrate the yeast as rapidly as possible.
Adding yeast to 10 x its mass of water at a temp of 32 - 36°C.
Stir for 10-15 min before adding the yeast to the wort.
0.5-1g per liter of wort (500-1000ppm) is recommended.
