DEXTROSE MONOHYDRATE
Dextrose Monohydrate is used as an alternative to white sucrose sugar in either the fermentation process or for priming beer during bottling or kegging.
Dextrose Monohydrate is an ideal for use in the making of vodka and gin, as it is 100% fermentable and highly soluble with a delicately sweet character. It will allow for a clean fermentation.
Dextrose Monohydrate is a white crystalline powdered sugar obtained from the complete hydrolysis of corn starch.
General Information:
Standard sucrose (white sugar) comprises of two molecules, glucose and fructose. This requires the yeast to produce enzymes to break down the two molecules before it gets to work fermenting the glucose first and then the fructose. This enzyme producing process can cause a lag in fermentation start time and can contribute to some esters (fusel oils) production in fermentation which create sulphurous flavours in the finished ferment.
Using Dextrose Monohydrate, which is a single molecule sugar, means the yeast gets to work straight away without the need for enzyme production. Dextrose Monohydrate contains a higher moisture content than table sugar so it is recommended that you use a bit more and this in turn will also give a higher alcohol yield with less impurities than when brewing with household sugar.
